Sweet Potato Casserole
My wife has been making this recipe for years and it’s always a hit. It comes from a friend from New Iberia, Louisiana. (Photo coming in a couple of days .)
4 cups boiled and mashed sweet potatoes
1/2 cup brown sugar
1/2 cup butter (softened)
2 eggs beaten
1 tsp vanilla
1/3 cup milk
Cream together butter and sugar. Add eggs, vanilla and milk to creamed mixture. Fold in sweet potatoes and wisk to make creamy. Pour into a baking dish.

1 cup brown sugar
1/2 cup flour
1 cup pecans
Mix together all topping ingredients and crumble onto the top of the casserole.
Cook at 350 degrees until golden brown (30-45 minutes).
Note: this casserole can be made the day before and put in the refrigerator to be baked later.
Serves approximately 12-15 people.
